Today’s drink of choice is the pineapple mocktail, a non-alcoholic delight you can easily make at home with just a few simple ingredients.

Ingredients

1 cup fresh pineapple chunks (or pure pineapple juice)

Juice of ½ lime

6-8 fresh mint leaves

Sparkling water or chilled lemon-lime soda

1–2 teaspoons simple syrup or honey (optional for sweetness)

Ice cubes

Pineapple slice + mint sprig for garnish (recommended by the Aesthetic council)

Steps to follow

Step 1

Lightly muddle mint leaves with lime juice in a glass and set aside.

Step 2

Blend your pineapple chunks until smooth, then pour over the muddled mint leaves.

Step 3

Add your ice cubes to the mixture, then top it off with sparkling water to bring out the fizz.

Step 4

Stir in syrup or honey if desired.

Step 5

Garnish with a pineapple wedge and a mint sprig.
